Don't you love it when Eggnog is in season? I do, and I love this easy way to use up some eggnog, This is one of my go to recipes:
Eggnog French Toast
2 Cups of milknog, or 1 cup of milk and 1 cup of eggnog.
6 eggs
4 Tbsp of sugar
a splash of vanilla
2-3 Tbsp. of pumpkin pie spice or cinnamon.
a loaf of your favorite sliced bread. We like when Hy-Vee has bread on sale for $.88 This usually use up most of the loaf of bread.
For all the ingredients, it's about $3-$4 for the whole recipe that fed my family of 5.
Heat Griddle up, then whisk the eggs, whisk in milk, then add the sugar, vanilla, and mix well. Once the griddle is hot, dip the bread one slice at a time into the egg mixture then onto the griddle. flip once, like cooking a pancake. Serve with syrup, Or if you like powder sugar, you could stencil powder sugar onto the top of the toast, That is what I did with a Batman stencil from the DC Comic Super Hero Cookbook.
